  iPhone's latest firmware shows 3G in Preferences

MacRumors has posted the above screenshot found under Preferences in the 5th iPhone Beta. It looks like Apple will give you the choice of running the 3G iPhone at 3G speeds, but will also easily allow you to turn off 3G to save battery life.
